1. Cast-Iron Cornbread (No Sugar)
Ingredients
- 2 cups cornmeal
- 1 tsp salt
- 1 tsp baking soda
- 1 egg
- 1½ cups buttermilk
- 2 tbsp bacon grease
Instructions
- Heat greased skillet at 425°F.
- Mix ingredients.
- Pour into hot skillet.
- Bake 20–25 minutes.
2. Cathead Biscuits
Ingredients
- 2 cups self-rising flour
- ¼ cup shortening
- ¾–1 cup buttermilk
Instructions
- Cut shortening into flour.
- Add buttermilk until soft dough forms.
- Form large biscuits by hand.
- Bake at 450°F for 12–15 minutes.
3. Hoe Cakes
Ingredients
- 1 cup cornmeal
- ½ tsp salt
- ¾ cup water
- 1 tbsp bacon grease
Instructions
- Mix cornmeal, salt, water.
- Form thin patties.
- Fry in grease 3–4 minutes per side.
