Appalachian Breads & Biscuits


1. Cast-Iron Cornbread (No Sugar)

Ingredients

  • 2 cups cornmeal
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 egg
  • 1½ cups buttermilk
  • 2 tbsp bacon grease

Instructions

  1. Heat greased skillet at 425°F.
  2. Mix ingredients.
  3. Pour into hot skillet.
  4. Bake 20–25 minutes.

2. Cathead Biscuits

Ingredients

  • 2 cups self-rising flour
  • ¼ cup shortening
  • ¾–1 cup buttermilk

Instructions

  1. Cut shortening into flour.
  2. Add buttermilk until soft dough forms.
  3. Form large biscuits by hand.
  4. Bake at 450°F for 12–15 minutes.

3. Hoe Cakes

Ingredients

  • 1 cup cornmeal
  • ½ tsp salt
  • ¾ cup water
  • 1 tbsp bacon grease

Instructions

  1. Mix cornmeal, salt, water.
  2. Form thin patties.
  3. Fry in grease 3–4 minutes per side.
