1. Kilt Lettuce (Wilted Lettuce)
Ingredients
- 4 cups leaf lettuce, torn
- 3 slices bacon
- 1 tbsp vinegar
- 1 tsp sugar
- Salt & pepper
Instructions
- Fry bacon until crisp; remove and crumble.
- Stir vinegar and sugar into hot bacon grease.
- Pour hot mixture over lettuce.
- Toss quickly and top with bacon.
2. Fried Green Tomatoes
Ingredients
- 3 green tomatoes, sliced
- ½ cup cornmeal
- ¼ cup flour
- Salt & pepper
- 1 egg + 2 tbsp milk
- Oil for frying
Instructions
- Mix cornmeal, flour, salt, pepper.
- Dip tomatoes in egg mixture, then dredge.
- Fry 3–4 minutes per side until golden.
3. Cooked Cabbage with Ham
Ingredients
- 1 small cabbage, chopped
- 1 ham hock or 1 cup diced ham
- 4 cups water
- Salt & pepper
Instructions
- Simmer ham hock in water 30 minutes.
- Add cabbage.
- Cook 30–40 minutes until tender.
- Season to taste.
4. Leather Britches (Dried Green Beans)
Ingredients
- 2 cups dried green beans
- 4 cups water
- 2 slices bacon
Instructions
- Rinse beans.
- Simmer with bacon 1½–2 hours.
- Cook until tender and deeply flavored.
5. Skillet Creamed Corn
Ingredients
- 4 ears fresh corn (cut off cob)
- 2 tbsp butter
- ½ cup milk
- Salt & pepper
Instructions
- Melt butter in skillet.
- Add corn and cook 5 minutes.
- Add milk and simmer 10 minutes.
- Season and serve.
