1. Kilt Lettuce (Wilted Lettuce)

Ingredients

  • 4 cups leaf lettuce, torn
  • 3 slices bacon
  • 1 tbsp vinegar
  • 1 tsp sugar
  • Salt & pepper

Instructions

  1. Fry bacon until crisp; remove and crumble.
  2. Stir vinegar and sugar into hot bacon grease.
  3. Pour hot mixture over lettuce.
  4. Toss quickly and top with bacon.

2. Fried Green Tomatoes

Ingredients

  • 3 green tomatoes, sliced
  • ½ cup cornmeal
  • ¼ cup flour
  • Salt & pepper
  • 1 egg + 2 tbsp milk
  • Oil for frying

Instructions

  1. Mix cornmeal, flour, salt, pepper.
  2. Dip tomatoes in egg mixture, then dredge.
  3. Fry 3–4 minutes per side until golden.

3. Cooked Cabbage with Ham

Ingredients

  • 1 small cabbage, chopped
  • 1 ham hock or 1 cup diced ham
  • 4 cups water
  • Salt & pepper

Instructions

  1. Simmer ham hock in water 30 minutes.
  2. Add cabbage.
  3. Cook 30–40 minutes until tender.
  4. Season to taste.

4. Leather Britches (Dried Green Beans)

Ingredients

  • 2 cups dried green beans
  • 4 cups water
  • 2 slices bacon

Instructions

  1. Rinse beans.
  2. Simmer with bacon 1½–2 hours.
  3. Cook until tender and deeply flavored.

5. Skillet Creamed Corn

Ingredients

  • 4 ears fresh corn (cut off cob)
  • 2 tbsp butter
  • ½ cup milk
  • Salt & pepper

Instructions

  1. Melt butter in skillet.
  2. Add corn and cook 5 minutes.
  3. Add milk and simmer 10 minutes.
  4. Season and serve.
